Mini Strawberry Cupcakes

mini strawberry cupcakes

How do you decide which recipes to publish, Michele? Easy. Pick what’s in season and what looks good at the markets. Let me tell you my little secret, however – quite often the recipe is something I want to eat. Eat and share, of course. Today’s recipe for miniature strawberry cupcakes fits the bill on all three counts : local berries are in season, they are looking beautiful at the markets (and the aroma is intoxicating) and I really, really, really want to eat these. Not sure if the sharing aspect will get a workout this go round.

Salted Chocolate Pecan Tart

salted chocolate pecan tart

Judging by the proliferation of chocolate and salt pairings on menus for both sweet and savory ¬†(salted mocha coffee drinks, chocolate cocktails rimmed with salt, beef dishes braised with chocolate and, of course, chocolate desserts sprinkled with flecks of sea salt), I’d say it’s now safe to admit you like a little salty with your sweet.

Pistachio Chai Ice Cream

december 17, 2016

As a winter person, I realize I am in the minority. Sure, palm trees and sandy beaches are lovely to behold, but give me a winter sunset with crimson and lavender streaks against the silhouettes of bare trees any day. Iced tea for warmer months and a hot steaming mug of chai in colder months, with ice cream never, ever going out of season. Yep, bringing the seasons in harmony means inspiration for another homemade ice cream recipe.

French Apple Pie

french apple pie

Thanksgiving is a little early this year. Are you cooking or being fed? Traditional pumpkin pie or something a little different? French apple pie, or apple pie with a powered sugar icing glaze, is a delicious old fashioned dessert relegated these days to cafeterias and Mom and Pop pie shops. It would be a great, and easy, addition to the Thanksgiving menu with its buttery cinnamon shortbread crust and tender apple filling. Use gluten free or all-purpose flour for equally perfect results.

Quinoa Almond Ice Cream Sandwiches

quinoa almond ice cream sandwiches

Is it my imagination, or did the ice cream sandwiches of childhood taste better? You know the ones – vanilla ice cream snuggled between oblong chocolate wafer cookies. Back then, there was a pleasant snap of the cookies and a melting creaminess of the ice cream.

Blueberry Lemon Cream Cheese Cake

blueberry lemon cream cheese cake

A few years back I had the idea of growing my own blueberries. With sun gracing only the deck and mostly shade covering my yard, the blueberry bushes would be in large deck pots. I was warned by the neighborhood berry growers that critters loved blueberries and netting around each plant was the only method to deter poachers.

Chocolate Berry Tart

chocolate berry tart

It’s almost time to do your patriotic duty and eat something red, white and blue. Naturally, summer’s berries will cover the red and blue, so let’s add something creamy like thickened and lightly sweetened Greek yogurt to cover all bases.

Bittersweet Chocolate Almond Tart

bittersweet chocolate almond tart

If you like dark, creamy chocolate desserts that are not too, too sweet, this one’s for you. If you are enamored of desserts with natural sweeteners, this one will do very nicely. If you like to get your vegetables from dessert, you’re three for three!

Chocolate Cherry Parfaits

january 29, 2016

chocolate cherry parfaits

As a kid, I cooked so many desserts that my parents readily gave in to my request for parfait glasses. We purchased them at the Pleasants Hardware in our neighborhood (where all things kitchen reigned alongside tools and snow shovels) and I have them still. They have languished in the buffet drawers until now, when the urge to conjure up a comforting memory dessert made me polish them to a shine and fill them with something akin to what my childhood chef prepared for the family.

Almond Apple Tart

almond apple tart

Thanksgiving is right around the corner, and the dreaded pumpkin shortage trumpeted in the news recently has not affected supplies in local grocery stores.Yet. I planned this dessert as an antidote to said shortage, but if you are like me, you enjoy an array of desserts at the holiday table, and having your pumpkin pie in addition to a creamy apple dessert is not considered a conflict of interest.
